Been reading alot of info on the expansion lately from people that were in the beta as far as leveling quickly.
Pretty much it is the way it was with TBC release. Questing and grinding with the occasional instance run to complete quests only. Once at 80 run back through low level instances for specific gear drops and rep.
So thats pretty much what I plan on doing. I don't mind helping someone through an instance for their quests, but if a person is lv 71 and asking to go on their 4th run through an instance for a specific gear drop....well, I'll be nice in my response but you can bet that it will be No as it isn't needed to level and the wasted time spent in that instance will just slow down the grind. Not to mention that item will be upgraded with a quest reward in 2 levels.
Now once I'm lv 80 I won't have a prob helping them get that item, but since I plan on grinding pretty hard (well my first character at least) it just seems like a waste of time and that's pretty much how the beta testers I have read posts from think as well.

Personaly I am not going to worry to much about gear till I am lvl 80. I will mostly use quest rewards and drops. I will do the proper lvl instances for the quests and I may redo them along the way to 80 in order to help people and to learn the pulls and fights.
But like you I do not plan to farm them for gears and rep till lvl 80.
